Every so often, between batches and deliveries, I pause to reflect on what shapes the work I do. Today, I want to share a story—not about chocolate, but about someone who helped shape the reason I make it.
Why her?
Every bonbon I make starts with something deeper than chocolate. Lately, I’ve been thinking about where that spark comes from—and for me, it traces back to a woman I never met, but somehow still hear.
Her name was Rachel. She’s part of the reason I do what I do. And I’d love to tell you why.
She arrived in London in the late 1870s…Newly married. A stranger to the East End. She made her first home on Bethell Avenue in Canning Town. She left the farmland of Braintree, Essex—for the narrow streets of London’s East End.
Not for adventure.But for family.
For survival.For a future.
She began making candy during one of the darkest chapters of her life. After loss, after loss, after loss, in one of London’s most fragile corners for families, in a place where many gave up—she offered sweetness.
A reminder to me that courage isn’t always loud.
Sometimes, it simply opens the door…and keeps going.
Life grew even harder.
She moved closer to the docks.
And somewhere in those narrow rooms, she began making candy by hand to sell.
It wasn’t quite Whitechapel. But life in Canning Town near the docks wasn’t safe—especially for women.
Still, she opened her home for an opportunity to build something sweet.
She pulled candy by hand beside a hot fire stove, hauled water, corseted in heat.
No plumbing. No ease.
Just courage—to try to succeed, in a world that offered little hope.
She left London with her second husband (my great grandfather), I hope, though I sometimes doubt, carrying hope—and heartbreak.
Two tiny graves behind her. One child left in her mother’s care, to soften a goodbye she would never undo. She would never see her mother or that child again.
But she kept going. Forced to build something new, with everything she had left.
